Ingredienti

  • 250 g di riso rosso a chicchi lunghi
  • 4 dl di latte di cocco non dolcificato
  • 1 cipolla, tritata finemente
  • 2 pomodori, a dadini
  • 1 peperone giallo, tagliato a metà, privato dei semi, a dadini
  • sale
  • pepe, macinato fresco
  • 4 gamberoni sgusciati ma non privati della coda
  • olio

Preparazione

  1. Mettere il riso in un colino di metallo e sciacquare abbondantemente con acqua calda, lasciare sgocciolare.
  2. Portare a bollore il riso con latte di cocco, cipolla, pomodori e peperoni, salare e pepare. Lasciare cuocere a fuoco basso con il coperchio per circa 45 minuti, regolare il sapore.
  3. Rosolare brevemente i gamberoni in poco olio. Disporli sopra il riso.
